Really Good Vegan Caesar Salad Dressing

"I've made this recipe several times and it has always come out excellent! Requires a good amount of salt and pepper; always taste and adjust accordingly. Dressing will thicken over time."

Ingredients :

  • 3/4 cup water
  • 1/2 cup cashews
  • 6 tablespoons fresh lemon juice
  • 1/4 cup sesame seeds
  • 1 tablespoon chopped onion, or more to taste
  • 8 capers
  • 1 teaspoon vegetarian Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, crushed
  • salt and freshly ground pepper to taste

Instructions :

Prep : 10M Cook : 10M Ready in : 10M
  • Blend water, cashews, lemon juice, sesame seeds, onion, capers, Worcestershire sauce, Dijon mustard, garlic, salt, and black pepper together in a blender until smooth.

Notes :

  • If you are using a Vitamix® blender, use 1 cup water instead of 3/4 cup. The Vitamix® will create a smoother dressing and require a little more liquid.
