Raw Vegan Beet Slaw with Mint

  • 1/2 teaspoon ground black pepper
  • 3 beets, peeled and grated
  • 3/4 cup goji berries
  • 1 fennel bulb, thinly sliced
  • 1 bunch green onions, chopped
  • 2/3 cup chopped fresh mint

Instructions :

  • Whisk vinegar, miso, and ground black pepper together in a large bowl. Add beets, goji berries, fennel, green onions, and mint; toss to combine.

Notes :

  • I highly recommend using organic ingredients in this dish wherever possible.
  • Soak goji berries in enough water to cover for 1 hour or longer before adding to slaw, if desired.
